Yesterday on the way home from an appointment my daughter asked for chili. I told here I could grab her some from the restaurant up the street and she said it wouldn't be the same as my homemade chili. So this morning I started to work on a pot of chili for her which will go great with the polar vortex setting in. Unfortunately, the last time I sent someone to the store for groceries instead of chili seasoning the got be chili powder. Not quite the same thing so today I threw together the best pot of Chilli I have ever made, sheerly because someone goofed and I had to make due. Hope you Enjoy!
1 to 1½ pounds 80/20 Ground Beef
1 tablespoon of Minced Garlic
1 tsp Salt
1 tsp Black Pepper
1- 14½ ounce can of Diced Tomatoes
1- 15½ ounce can of Chili Beans
1- 15½ ounce of Black Beans
1 cup of your Favorite Salsa
2 Tablespoons of Chili Seasoning (see recipe)
1 Tablespoons Cayenne Pepper Sauce
⅓ Cup Dark Brown Sugar
CHILI SEASONING MIX
4 Tablespoons Chili Powder
1½ Tablespoons Cumin
2 teaspoons Cocoa Powder
2 teaspoon Paprika
1½ teaspoon Red Chili Flakes
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
½ teaspoon Cinnamon
Store in air tight container
Brown ground beef with minced garlic, salt, and black pepper in you Insta-pot or a pan on the stove.
Drain oil from beef and return to pan.
Add tomatoes, beans, salsa, chili seasoning, cayanne pepper sauce, and brown sugar to Insta-pot or pan and stir thoroughly.
Salt to taste.
If using an Insta-pot pressurize and cook for 20 minutes. If cooking on stove simmer on low for an hour.
Allow Insta-pot to depressurize on it's own before serving.
May be served with Sweetcorn Bread Casserole or over a noodle of your choice. Consider topping with chopped sweet onions, shredded chedder cheese or sour cream for additional flavor. Enjoy!
